Mexican Cheese Question

I'm looking for a Mexican cheese that will melt on a sandwich and I'm getting very confused by information on the different manufacturer's websites. I think I may want Asadero or Queso Quesadilla (which may or may not be the same thing as Chihuahua, I can't tell). Can someone shed some light on the matter for me?

  1. I'm not an expert on Mexican cheeses, but I can say that asadero and queso quesadilla melt well and easily.

    1. Queso Chihuahua and Mexican Manchego also melt well. Chihuahua will get runnier than Manchego. Oaxaca also melts, but is firmer, like mozzarella.
