Is lavender ice the new foam?

After two meals with lavender ice, I have to wonder is ice the new foam?


Lavender ice is exciting and surprising on the palate . . .it worked both times I tasted it.

What else have you seen (or maybe I should say tasted) that rivals foam or dust? What's the bleeding edge texture of the moment?

    The Wine Bar (Saratoga Springs) served cold beets with fennel, blueberries and lavender ice . . .

      The Wine Bar's ice melted and The Wine Bar on lark's ice was more like a crystal or candy and didn't melt. . . Cold and melty vs. hard, thin and biting . . .
