Shun Kaji knives
Does anyone know if Shun Kaji knives are single or double edged knives?
Just to add more info -- they are virtually identical to Shun Elite except for the handles. I believe Kaji may be made exclusively for William Sonoma. I have a ten inch chef's knife the I use most frequently of all my knives, and it is a great knife. Shuns all have Western profiles, i.e., they are all double beveled.
