Quail Eggs

Is there a trick to peeling them?

      Maddening, ain't it?!

      I roll them (gently! those little guys squish easily) to crack the shells, then drop them into a bowl of cold water and let them sit for just a few minutes. Makes life MUCH easier.

      The dog's peeved, though, because my discovery has led to him receiving considerably few smashed-up quail eggs that I can't serve any more.

        Thank you Sunshine -I am going to try that today for Quail Egg and Asparagus Tarts I am making for a Garden Party.

          Worked like a charm - thanks again sunshine. I had been cracking the shells after they had cooled but doing it while they are hot makes all the difference - i only lost 4 out of 36

            I always do it when they've cooled. never done it while they were hot.
