Why do you get cheese on top in sandwiches these days?

When I was taught to make sandwiches, especially subs, you always put the cheese underneath the other toppings. This prevented you from snagging a whole slice of cheese along with your bite of sandwich, and in hot sandwiches "glues" the other fillings to the bread. I have noticed in recent years the disturbing trend of sandwich makers in restaurants (Subway is a top offender) doing the opposite. Why are they being taught to make sandwiches that way?

    What if you toast the sandwich? Most people want their cheese on top to get all bubbly and gooey.

        I thought it was a given that you put the cheese on the bottom, just above the bread, to prevent soggy bread. It acts like waterproofing. But come to think of it, Subway does put the cheese on top. I have no idea why. Good point, aynrandgirl.

          All depends what goes in the sandwich. I tend to put the cheese between ingredients that are on the moister side and the bread; for example, using the cheese as a barrier to prevent the bread absorbing all the water from sliced tomato and becoming soggy.

            Cheese belongs on top of other meat fillings. But, if there are veggies on there too, those go on top of the cheese when I make sandwiches. (Same, BTW for cheeseburgers.) For a hot sandwich, though, I try to put a pieces of cheese on the top and another on the bottom so that both pieces of bread are "glued" to the sandwich.

                That is interesting. I have always put cheese on top. Always. I would consider it "upside down" if it were on the bottom :)

                  It's more important for subs, especially lumpy ones like meatball subs. With plain sandwich bread it doesn't matter much.

                    Makes sense to keep the bread from getting too soggy. I use this method if I am making a sandwich at home to eat later- soggy ingredients on the inner-most layer surrounded by cheese or a lettuce leaf (especially tuna, chicken or egg salad). Some hot sandwiches require the cheese be applied to the meat while it is on the grill to melt, like a cheese steak or burger I think are better left on top to melt the cheese into the meat, however I suppose you can always flip your sandwich over and voila... you have it on the bottom.
