Hello, I'm in California and working on a menu for a cocktail party that will feature Northern Indian cooking; it will all be appetizers. I have a number of hot appetizers--many fried--as well as tandoori. But I would also like to have some cold dishes that would also be finger food but could be help yourself rather than passed by a waiter. Any suggestions? Thank you.
Most North Indian appetizers are served hot or warm, but there are a few you could try: Dahi papri chaat (and you get creative with different pulses and veggies that are used), dahi bhala which also has a yoghurt sauce. You could do Indian versions of canapes with various toppings on a variety of papads
One idea that comes to my mind was something i had done for a party some months back - chicken sliders where the chicken filling was a spicy-chicken 65 tempered down with some mayonnaise and served cold.
