Stewed chickpeas at Prune- how do they make those eggs??

I had the spicy stewed chickpeas at Prune for brunch today. Does anyone know how they make the eggs for this dish? My guess is that they poach them til they're just formed and then batter them. I just can't wrap my head around how they do it so successfully. Anybody have any ideas?

That's pretty much right. You poach the egg, take it out with a slotted spoon; gently bread with breadcrumbs, beaten egg and panko; and then deep fry just until the breading turns golden brown. It just takes soft hands. You could do this at home.

You might also want to chill the poached eggs beforehand so that it won't overcook when you fry them.

Yes -- or move them directly from the poaching liquid to ice water. This also stops the cooking.

Luckiestduck, probably it'd be helpful to ask on Home Cooking if you need specific tips on technique. They're pretty good over there.
