Meat: pretty much any restaurant that's not seafood specialty or vegetarian serves meat. If you could be more specific - are you looking for a steakhouse? Or just a really great meat dish?

Marea - though i'd skip the secondi (I found them uninspired) and get an extra primi or couple extra antipasti instead.
Le Bernardin - depending how fancy you wanna go.
Morimoto - gets a lot of flak for being a "TV Chef" but, with selective ordering, some of his signature dishes are spot-on. Skip the sushi course and the tartares, go for more interesting composed dishes. My optimum meal there is cold app / hot app / entree. The Yellowtail Pastrami is excellent, the "Oysters Foie Gras" are little works of luxurious art, and the Red Miso Toban Yaki is amazing.
Kyo Ya - a mix of seafood and meat if you get the Kaiseki dinner (must be ordered two days in advance) - but oh what a meal it is. Could break the budget a bit on the Kaiseki, though going a la carte can still be a great experience.
Soto - a palace of uni. No chef knows how to work the subtleties of the little critters better than Chef Soto, in my book. Like Morimoto, skip the sushi, go for the kitchen plates. Amazing.

Del Posto - if you're looking for something with a bit more fancy atmosphere. Might stretch the budget slightly, with wine and everything.
Babbo - hearty, big flavors, spectacular. If you can get a rezzie, that is.
Falai - underrated gem, modernist Florentine. Brilliant pastas. Balances the more experimental flairs with a strong rustic base. As I've described him before, a bit like Batali meets Wylie Dufresne.
