Advise on my celery please

Hi there,

I planted both red celery and cutting celery last November. Both did so well, I've really enjoyed watching them grow and using them from time to time.

They are about to flower and I am wondering if I should top them before they do. I generally cut back things before they flower, or harvest them, should I do this with celery as well?

I plan on pulling the whole plant in the next week or two, as I want to re-plant this bed with lettuces.

Is there a use for the celery tips/flowers? I never considered they'd flower, it's pretty cool to look at!
Thanks in advance for any advice, will definitely plant celery again.
