Coming Soon ... Good Ramen Near BC PLACE Hopefully
Notice this as I was walking home from work. It's replacing the Ezogiku on Robson near the central library. Hopeful this will be good ramen in line with my favourite Santouka as Ezogiku was just not good since they switched their menu several years ago. I'm guessing it's a chain from LA. Any intel anyone can offer would be appreciated.

Jinya is fully opened. You can get all the toppings and sides. Credit card & debit is now accepted too.
I had the limited (20 Servings per day) Shio Tonkotsu Ramen: Pork Premium rich broth
with Pork chashu, Spinach, Bamboo, Green onion & Fried onion and I added a flavoured eggThe broth is complex and reminds me of the "old fire" soups my mom makes with roasted pork knuckle that she would get from the Chinese BBQ places. The soup is thicker and has a slight gelatinous taste which can be off putting for some. There was also a layer of fat on my soup which I wished they had skimmed before serving it to me.
Noodles were al dente and similar to Santouka but yellow.
I thought the Pork chashu was different from other Ramen place as you can taste a distant grilled/roast taste. I notice some marks on the chashu. It 50/50 fat - meat ratio, soft and tasty.
The flavour egg was good but it was hard boiled and not the "sugar hearted" version some places serve.
Overall very good Ramen and happy this place is near my work. It zooms up my list and sits #2 behind Santouka.

re: moyenchow
Thank you for the info. This will be next on my list. I had this really thick broth in Honolulu in Feb. called Kotteri (chicken). It was as thick as gravy. For myself, I like broths not so thick.
I have to try every ramen place we have here and I like complex broths so I appreciate your report.

re: clutterer
CONFIRMED: it's definitely open. And busy. Bring cash - no credit, debit.
Very bare bones soft opening. Only basic ramen (shio/shoyu/miso/spicy) avail, though there are chicken ramen bowls ("Jinya", wonton and veggie) as well.
No add-ons (eg egg, corn, butter, etc) until later this week, apparently.
A few familiar faces in the kitchen; I think one was from the Ezogiku days but it's been years since I'd been.

Walked past tonight and it looks VERY close to opening ... there was a shop-vac lying around, but I saw someone back in the kitchen preparing things, so I'd imagine the soft-open is coming soon.
FWIW, I live right around the corner from this place in LA, and it is fantastic. Rameniac (LA board God of Ramen) loves it, as does Jonathan Gold (our Pulitzer-prize winning Food columnist).
As I've got another 3.5 months on my visit here to Vancouver, I'm quite excited to try this outpost.
