celery mayo

I had some unbelievable bread dip while traveling through Salta, Argentina.

From what I could gather it was a basic mayo with hard boiled egg, garlic and celery ground in. It has a pale green color. Really sublime and tasty.

Anybody got a recipe? Not sure if I'm missing an ingredient or two.
