deboning a whole pig

Hi I am writing from UK but shortely will be in LA as a guest chef at a secret location! Can anyone help me find a butcher /supplyer that can supply deboned pigs. I have managed to do it to a piglet but the meal we envisage will use 3-4 month old pigs and I am hoping we can find them already boned. many thanks sally

    1. I would suggest leaving a message for Harvey's Guss (if not the top butcher in LA then it's in the top 3) and see what they tell you.

        I'd Def go with Harvey's Guss. He is about as old school as it gets in Los Angeles and works with a lot of the top restaurants in town and does custom butchery.
