Pacifico Restaurant, Center Valley, PA
Had a wonderful dinner at Pacifico last night. The restaurant is one of several located at The Promenade Shops @ Saucon Valley, just off 309 above Coopersburg. Pacifico specializes in fish and I ordered Pan Seared Sea Scallops and Shrimp with Lobster Ravioli in a chipotle - honey chardonnay sauce ; hubby ordered Red Snapper; my sister ordered Short Rib & Mushroom Ravioli and her boyfriend had Skirt Steak. All of the entrees were cooked to perfection. Pacifico has a nice bar area, where we waited for our table and enjoyed Pomegranate Margaritas and Mojitos, which is a specialty of Pacifico. Entertainment for the evening was a Caribbean Steel Drum Band. Highly recommend this restaurant for a great dinner out. It's located next door to Melt, which has a rooftop bar where you can enjoy after dinner drinks sitting in your own private open air lounge and looking at the stars.

Small world - I work in Coopersburg and live in Harleysville. Just started about three weeks ago and I love my new job. The commute isn't too bad - I head up Allentown, cross 663 to Mill Hill Road then take Old Bethlehem Pike into Coopersburg. No highways, tolls or traffic issues. Haven't been to Promenade yet while working up here. I did hit Lehigh Valley Mall & The Christmas Tree Shop during the tornado event on Monday evening. Then I got lost on the way home and was heading for the Poconos!!! We are going out tonight for Margaritas at the Mexican place across the street. Can't recall the name but they are in the shopping center at Fairmount/Jacoby and 309. $5 Margaritas on Wednesday evening :)

We had dinner there a few weeks back and had a nice time as well. It was advertised as authentic spanish tapas, but seemed to be more of a latin fusion. We ordered tapas style small plates. Food was quite good, we had an amazing chorizo and chicken ravioli, a braised beef flat bread, and a pork tenderloin wrapped in bacon with a really nice pineapple bbq sauce. Service was great. The sangria was fantastic, particularly the white sangria.
