best bacon

now that tj's has stopped selling niman ranch uncured bacon i am going through withdrawl. 

what is your favorite bacon?

    Marin Sun Farms' house-made bacon is absolutely amazing. Thick-cut, perfectly seasoned, comes out nice and crispy.

      For me, Fatted Calf or Hobbs are among the best out there.

        I'm a huge fan of Black Pig Meat Co.'s bacon. I was mainly eating the Niman Ranch bacon until my local Oliver's Market started carrying Black Pig, and I was pretty much an instant convert. Love that it is local to me too.

          Hobbs is good. Golden Gate carries it.

                Yes, Neuskes is very good. But even better, I think, is the wild boar bacon I get at Baron's in the Alameda Market Place. They carry both the wild boar and the Nueskes in slab form and hand cut it into nice thick slices. Ummmmm....

                  I agree. I have wild boar, bison and also black bear bacon,
                  and I still prefer Nueskes.

                    I am assuming bison and black bear are not brand names and that they are also not pig bacon and should therefore be disqualified from this thread. ;-)

                      Good point, but the topic was "best bacon".
                      I also had a wonderful BLT at a little cafe in Park City Utah, made with the chef's
                      homemade Lamb bacon. Delicious.

                        The USDA, FWIW, defines "bacon": "The term "bacon" is used to describe the cured belly of a swine (hog) carcass."

                          Thanks for the info wolfe.
                          Perhaps the USDA needs to update its definition.
                          Or come up with new term for all these knockoffs.
