duck fat - where to buy
Any suggestions on where I can pick up some rendered duck fat without paying a HUGE premium for it would be appreciated. Thanks.

Gourmet Garage usually has it (D'Artagnan's brand)...Citarella usually does too.

Murray's Cheese. Not sure how much it is, but I know they always have it.

Not sure when you need it by, but I have ordered from this place before and it has a good product that is not too expensive.

I think Fairway usually has a good price for 16 ounces - though it's been a while since I've looked.

Was searching for duck fat a couple of years ago and discovered Hudson Valley Fois Gras:

Shipping's not cheap, but the price was so good--$12.50 for 2 pounds--it more than made up for the cost of shipping.

I'm not sure whether Hudson Valley schleps duck fat around with them when they sell at farmer's markets (I've never checked), but they do frequent a good number, if you want to avoid shipping charges: http://www.hudsonvalleyduckfarm.com/b...

I recall reading, I believe right here on CH, that if you order it ahead of time they will bring it to the market of your choice for you and you can pick it up there.

Yes, Ottomanelli and Sons carries the D'Artagnan brand, as well. I think prices are about on par with what I've paid at Fairway in the past.

Buy a D'Artagnan duck breast; they are widely available in good NY grocery stores. Score the fat in a checkboard pattern and render the fat in a small frying pan. Pour it off and save. Put the breast in the oven briefly; slice thinly, sauce and enjoy.
