Dorado - recipe ideas, please
The other half loves dorado and bought some. I thought I'd prepare it tomorrow night, but I have no idea what preparation would be best. Care to provide some guidance on tested recipes you've loved?
EDIT: Wikipedia tells me it's also know an mahi-mahi.

If you got a whole fish that's been cleaned and butterflied, you can stuff it with sauteed fennel, olives, oregano and orange slices. Tie up the fish, season with salt, pepper and a drizzle of olive oil. Bake at 400 degrees for about 20-25 minutes. You can do the same thing if you have fillets - just put these ingredients onto parchment paper and the fillet on top of these ingredients. Season with salt, pepper and a drizzle of olive oil. Fold the parchment paper so everything is inside the packet. Cut a slit on top and bake at on a baking sheet 400 degrees for about 12 minutes.
