light, healthy, low sodium dishes to get back on track....what are your current favourites?
Planning to make some tabbouleh, a cucumber salad, fruit salad with cilantro, lime & chili (or mint & lime), maybe a jicama salad, and some cabbage soup after too many heavy meals in a row.
I'm also going to be making some strawberry agua frescas, and maybe some rhubarb juice.
What are your current go-tos when you're looking for something light and fresh-tasting?
I made this last night. It was easy to make, tasty, and filling without being too heavy.
I used black beans since I couldn't find canned adzuki beans and swapped the chard for spinach, since I had that on hand. I also added some carrots and a little ginger. Next time I make it, I'm going to leave out the extra salt--the saltiness from the miso would have been plenty for me.
I lean heavily on the EatingWell.com website for inspiration and recipes when I want lighter fare. The recipes are all made with real food and each recipe has the nutrition info listed at the end.
One of my favorite light recipes is a grilled eggplant parm. I slice eggplant lengthwise, grill one side then flip; top the slice with sliced tomato, chopped fresh basil, and a little mozzerella and Parm. Reggiano. If you use a light hand with the cheese, it is a fabulous light meal that I eat regularly in the summer time.
