Barcelona vs Madrid

Hi, I am staying 7 nights in each city and was looking for suggestions on what I should focus on for each city. For example, which city is better for molecular gastronomy, traditional food, tapas, paella, etc. Any must try dishes/places in either city?

    Madrid:
    Jamon Iberico de Bellotas from jabugo (AKA Jamon Jabugo) at Museo del Jamon or Meson 5J
    Cocido madrileño (chickpea & meat stew)
    Churros con chocolate (a great breakfast after "killing the night away" at the bars/clubs/terrazas in Madrid) at San Gines

    Barcelona:
    Navajas (razor clams) at El Merendero de la Mari
    Agree that Barcelona's molecular scene is more avant-garde than Madrid's

    Good paella can be had in either city.

      IMO, Barcelona is better for molecular gastronomy and Madrid better for traditional food and tapa bars. In Madrid you can taste dishes from Galicia, Asturias, Basque Country, Castile, Andalusia, Madrid itself...
