Salmon patties/burgers

A non-fish-eating friend has given me a package of wild caught salmon burgers--10 1/4 lb. patties. They are currently thawing here in the fridge at work, so I will need to cook them promptly. The package says no filler and natural mesquite seasoning. Any thoughts on ways to use the 8 which will be left after using two which I will grill for our dinner tonight?

Ideas welcomed-thanks!

Teresa

Crabby patties. Used to make salmon patties and put them on buns, call them Crabby Patties and feed to the kids who loved "Spongebob".

Salmon loaf can be delicious. But mainly my head is swimming with the image of a school of wild-caught salmon patties, scooting through the water, perhaps like swimming scallops...

the smoky flavor from the mesquite seasoning should work well if you crumble them into in a breakfast hash, fold into eggs with a smoky salsa or hot sauce, or mix with chipotle mayo and your favorite add-ins for salmon salad.

Once they're cooked you can freeze them and reheat later but, if you'd like some alternative ways to use them, try crumbling them in a salad, or in a seasoned white sauce with some chopped hard boiled eggs and serve over waffles or toast. Or use them in "roll ups" with some tomato, cilantro, mild cheese, some salsa, ..... some guacamole or a dollop of sour cream perhaps?

Or on mashed or rice. Good eating, although since the OP's patties are mesquite seasoned, they may be ultimately better as a burger. +1 on the freezing for a later date.
