Rome--1 day cooking class focused on pasta
Hi, I am new to ChowHound, but when I saw your question about Cooking classes in or near Rome, I just had to place in my recommendation. I am not sure if it is too late for you but if you have not visited Rome yet, I highly recommend 'Convivio Rome Italian Cooking Holidays as an option for your One Day cooking class. I went with my partner not long ago and was very impressed with Guido's knowledge and how he taught our group of 7 people in his home kitchen. One of the group specifically requested to learn about fresh pasta making 'from scratch' and so this was included in our menu. And I must say the class was not only informative and relaxed but alot of fun. We learnt fresh pasta and cut it into Tagliatelli then made the most delicious ragu sauce I have ever tasted, plus two other courses including a Roman ricotta cake. It makes my mouth water just thinking about it. We were given recipes to take home and I have been able to replicate them all again with great success! The day not only included the cooking lesson and lunch in their home 500 year old wine cellar (an amazing experience in itself) but a tour around their medieval hilltop village of Toffia (they are just north of Rome) and an afternoon tour of a monastic village close by, before we all got taken back to the local train station.
Guido (an 8th generation Roman) who speaks English fluently and his Australian wife, Sally, run Convivio Rome together. Their village of Toffia was magical and easy to get to from Rome. Everyone from the group came up via train from Rome for the day.
