Best Choice near the Vatican for lunch on June 2 (Republic Day)?
I had planned a lunch at L'Arcangelo for after a tour of the Sistine Chapel but had not realized it was a Rrepublic Day holiday and so they are closed.
Any recs for that area that you know may be open within walking distance (less than a half hour from Vatican Museum)?

Restaurants closed on Sunday usually are closed in public holidays too. This is the case of Arcangelo.
I did recently some research for a post published in TR blog dedicated to eating in Vatican area. It is available in English too but I avoid to link it here because it wouldn't be "polite".
In that area I like Sunday lunch at Settembrini (the caffè, serving also some cooked dishes while the near homonymous restaurant should be closed) and at a Tuscany food restaurant, Dal Toscano in via Germanico (pay attention since there are other restaurants with a similar name!), especially when I want to eat good meat. A reliable blog reader recommended Passaguai in Via Pomponio Leto highlighting the quality of raw material. I'm curious to try it and I'll let you know my opinion in case I'll try it before the 2nd of June.
As you have probably already read on this board Pizzarium is also a great option for pizza by the slice but no seats are available. It opens at 1pm on Sunday.
Anyhow I suggest calling the restaurant you choose to check if they don't have an extraordinary closure for this festivity.
