Lemon Simple Syrup Question

Hi all!

I just made the Candied Lemon Peel Recipe at http://allrecipes.com/Recipe/candied-lemon-peel/Detail.aspx to top the Lemon Curd Layer Cake at http://www.epicurious.com/recipes/foo...
and have a mammoth amount of lemon flavored simple syrup left over.

Q # 1 - how long will it keep in the refrigerator?
Q # 2 - what the heck can I do with all this lemon simple syrup... there is at least 2 cups, if not more.

    Simple syrup keeps for-ev-er in the fridge! Always nice to have on hand to add in cocktails, or to ice tea or you could make lemonade.

      lemonade, lemon sorbet, lemon ice cream.

        Would be great used to soak the layers of the lemon cake itself.

          Yep, I just made 2 loaves of Inas lemon cake and she soaks it with a simple lemon syrup, which imho makes the cake super moist with an extra lemon punch. Next time I am going to try it with oranges.

            I second the rec for Ina's Lemon Cake. One of my favorites and a real crowd pleaser.
