Sunday in Florence?

Hello everyone,
Now that my Rome plan is pretty well set, I'm on to Florence.. The list is:
Sostanza
Vini e Vecchi Sapori
Casalinga
Cibereo Trattoria (not ristorante)

One problem is that we are there on Sunday, Monday, Tuesday. Anybody know a good Sunday dinner spot? Are there any reasons to get rid of any of my choices above? Any places I should look at further? We are looking to spend 40 euro or less per person and are interested in solid, seasonal, fresh, typically local food with good value wine.
Thank you for any suggestions,
Amy

Mangiafuoco Bracerie is open on Sunday and is just what you requested: solid, seasonal, fresh, typically local food. Great people, too.

      Hi Amy,
      Really, Sostanza?
I had a great meal at Cipolla Rossa and Tripperia Il Magazzino.
For Sunday, I"d suggest Tre Soldi or one I just mentioned.
Casalinga is one of my favorite old fashioned places.
If you're looking for one more expensive, creative place try Osteria Personale.

Sostanza is there because I saw recent, positive reviews here and on other sites. If it's a no-go, please tell me and why. I'll definitely check out the other suggestions.
        Thanks,
        Amy

Vini e Vechi Sapori is shown as being open Sunday for lunch, not dinner. Try it then.
