EVER HEAR OF FISH CALLED "OPAH" ?

A friend (who is a commercial fisherman ) gave me some very nice looking pieces of "Opah " it is a beautiful pink color meat. What is the best way to cook this ?

Its also called moonfish, but I've only seen it sold as Opah. I don't see it often, but grab it every time I do. I love it. Its great on the grill, or pan seared. Treat it anyway you would treat swordfish...but its a much better fish....tasty and firm. It really does taste as good as it looks.

I've never found it on a menu or in a market, but it's a staple in crossword puzzles!

Yes! I had this several years ago at McCormick & Schmick's. Menu said it was from Hawaii. It was excellent!!! I haven't seen it anywhere else.

about 10 years ago, when on vacation in Hawaii, my boyfriend at the time ordered a Crab-Stuffed Opah. it was wonderful... so much so, that i forced him to split his with me in exchange for half of whatever i ordered... he wasn't thrilled. i always said i was going to try to replicate it, but never did. and now, i can't remember much more about it than "that dish was superb."
