i feel like good ceviche. Where do I go?

i just came back from Miami, had some super ceviche from a local restaurant (nothing super fancy), that had a variety of ceviche to chose from.

Is there anywhere you can recommend for a good ceviche?
probably for lunch on a sunny weekend, but open to ALL suggestions.

Hmm, I don't think Salpicon is open for lunch, but I had pretty good ceviche from there recently.

The trio of ceviches at Frontera Grill is very good, although the trio is heavy on tuna (two of three).

Carnivale has some great ones but I think the selection narrows at lunch (4 or 5 choices at dinner, maybe 1 or 2 for lunch). They may accommodate a request - never hurts to ask. There's a Peruvian cebicheria chain, La Mar, with a location in San Francisco (with one soon to open in NYC). I could easily eat there every day. Keeping my fingers crossed that they make it to Chicago.
