I've only had the pleasure of smoked cinnamon at a restaurant in Pennsylvania. The smokehouse was nearby and one of the products was smoked cinnamon. The restaurant used the spice on vension chops as part of the spice rub. It was really tasty. What I recall about the smoked version was what you probably would expect; a deep woody spice. If you enjoy the flavor than any baked sweet or savory preparation calling for cinnamon would work. I wish I had access to some fresh smoked cinnamon, ali. Good on you.
