As a fellow veg, I would like to help you. Could you be a bit more specific as to towns you're interested in, and how far "inland" you're willing to go?
    Cheers!

Bevanda in Great Neck is italian but they do eggplant, pasta primavera, and will omit meats/fish/cheeses at your request.

So will practically every pizza parlor... I don't think that's what the OP was looking for.

North Shore where: Great Neck? Wading River? How far north and south? Any particular cuisine?

Two places that are north-ish but not exactly North Shore are Dosa Diner and House of Dosas, on Broadway in Hicksville. If you're talking out east, Tiger Lily Cafe in Port Jeff is a pretty funky place, more cafe than restaurant.

          House of Dosas
          416 S Broadway, Hicksville, NY 11801

          Dosa Diner
          128 Broadway, Hicksville, NY 11801

Ayhan's in Port Washington has a few vegetarian dishes and salads.

Suggestions, not recommendations. By the way, if you use google maps, just put in the general location and then search nearby for vegetarian.
