Rainbow Cookie With Thin Layer Of Almond Paste
Hello, I have recently had a rainbow cookie and am looking for a recipe for it. It is unlike any rainbow cookie I have had in that it has a thin layer of almond paste as the top layer under the top chocolate coating. The person who made these cookies (but guards the recipe) told me that the almond paste is rolled out under plastic wrap and then laid onto the other layers. There is no almond paste or flavoring in the cake layers and this person uses strawberry jam between the layers. Does anyone have a recipe like this or have you possibly seen one anywhere? I would really like to make these cookies but am at a loss!
This is ringing a serious bell. I believe the cookie (bar) is of Austrian origin, and I remember that the top layer of frosting is tempered by leaving it in a cold place, like a marble stairwell. It'll take a little digging, but give me a minute and I'll lay my hands on it.

Are they Austrian? My Italian family always has them at Christmastime. Gram used to call them Italian flag cookies. This recipe uses apricot preserves, but strawberry sounds great, as I'm not a big apricot fan. http://smittenkitchen.com/2008/12/sev...
I've never had a layer of almond, but they're always almond flavored. Maybe you could skip that part of this recipe and try to mimic what your friend did?

I follow a similar recipe and also use strawberry preserves (I pick out the chunks, when I'm feeling more energetic I'll heat and strain). At Christmastime they get devoured, and I make tons of other cookies - these are always the first to go and I've had to increase the quantity I usually make. The cake layers are scented with almond, I'm tempted to try this with plain vanilla layers with the marzipan/almond paste layer beneath the chocolate - as you mentioned; otherwise the almond flavoring might be too overwhelming, for me at least.
Btw they're also known as Italian Seven Layer cookies (this version would be eight!). Thanks for mentioning this, maybe I'll give this a whirl this year.
