Just bought an entire lamb - need recipes!

I just brought home an entire lamb from a local farmer. I've got legs, racks, shoulders, chops, ground meat and organs. What's your favorite cut and how do you usually prepare that cut?

        My favourite - lamb shanks, done in the crock pot with caramelized onions in a tomato based sauce (can of diced tomatoes, bbq sauce) and served over cheesy, creamy polenta. Super easy and super good.
