2 Week Trip To South America - Please offer your experience and advice (food and wine-centric)

My wife and I have 2 weeks to visit SA for the first time, and we would like to stay sort of on the west coast for this trip. We love good food, particularly seafood over red meats, and we enjoy wine and wine country. We have traveled many parts of the world and enjoy safe clean places with interesting culture. We arent big fans of overly touristy places, and rarely do "tours" of any kind in a new city...rather just absorb the culture in our own way, through the food and exploration.

So we are thinking about LIMA, PERU, SANTIAGO, CHILE, BUENOS AIRES, ARGENTINA, AND CARTAGENA, COLOMBIA. Maybe spend about 4 days in each. Please make recommendations for anything to skip or add to our trip, or other cities near those major cities we should check out. And any restaurants we should go to (i.e. see my post from our culinary trip to Spain). Thanks!
