diary-free sponge cake recipe
I am looking for a basic yellow sponge cake recipe that I can use for layer cakes. I like it to be soft, with tight crumbs and ideally does not dry out easily (something like sponge cake from Asian bakeries). I can't use diary products, or any vegan diary substitutes because of my kids' allergies, otherwise I can pretty much use anything (butter, flour, eggs, etc). Any suggestions would be greatly appreciated!
