diary-free sponge cake recipe

SerenaE Apr 21, 2011 11:01 PM

I am looking for a basic yellow sponge cake recipe that I can use for layer cakes. I like it to be soft, with tight crumbs and ideally does not dry out easily (something like sponge cake from Asian bakeries). I can't use diary products, or any vegan diary substitutes because of my kids' allergies, otherwise I can pretty much use anything (butter, flour, eggs, etc). Any suggestions would be greatly appreciated!

Sponge cakes generally don't have dairy, other than eggs. This is a good reliable one that can be baked as layers. If you don't want it to dry out, you can brush a simple syrup (flavored is better) over it after it cools.
