  1. Pipe dream. We use Olivio at our house but in no way do I ever think of it as a substitute for butter; I just think of it as a spread. I have never tasted anything that comes near the taste of butter.

have you tried any of the aforementioned?

      1. re: vandan

If you're worried about cholesterol, the only substitute for butter is to use less butter :)

        Butter! There is no substitute...

        1. re: vandan

I think I've tried just about everything that is in the dairy case at our Shop Rite. Like I said, nothing compares. You just have to think of it as a spread. I've settled on Olivio because it's made with olive oil so I feel I am doing something good by eating it. Who knows! lol

          1. re: ttoommyy

+1 on Olivio, though as ttoommyy said it's not so much a substitute for butter as a butter enhanced by the healthy stuff in olive oil.

      2. This time of year I binge on a couple of boxes of matzo and butter & salt. Can't get enough and never could even entertain the idea of any substitute for butter. With new cardiologist rules in place this year I tried it with Earth Balance I had on hand and to my extreme surprise, it was acceptable.
I have better things to do than to line up the various products to taste-test them side by side and I don't have any recent experience with any other non-butter substances. This test---a rather tough one---is good enough for me to declare the stuff "not bad". Doesn't answer your question. Basically a product review.

Second Earth Balance. Of course it's not a "substitute" for butter (impossible, like everybody is saying) but I think it tastes pretty good on toasts. My parents-in-law use it almost exclusively (other than cooking eggs, etc.) and if I'm eating breakfast with them, I'll put Earth Balance on my toasts without hesitation.

          1. re: uwsister

I'll 3rd earth balance. Again, nothing "is" butter except butter, but it's pretty good on toast.

            1. re: uwsister

earth balance is the best of the lot imo. the sticks are acceptable for vegan baking and the spread is okay for that type of "spread in a tub" mentality-- btw for cooking, the EB sticks and the tub are not interchangeable, trust me.

there is no such thing as a substitute for butter. butter is wonderful, every effort should be made to eat real butter, the best stuff one can get imo. butter subs have their place at times, i suppose, so i submit EB as my preference for those times. it still sucks compared to real butter but it's not offensively horrid.

Another vote for Earth Balance. I have never bought the sticks, only the tub. Why do you say they are not interchangeable for cooking? Only curious because my son cannot eat a lot of dairy and I make banana muffins and use the Earth Balance from the tub. They come out fine.

                1. re: valerie

i'm glad the tub spread worked for your muffin recipe! i tried to sub the tub for sticks one time for a vegan cookie recipe and a vegan cake recipe (store was out of the sticks) and had a major FAIL on both-- the final products were greasy and texture was off. both recipes worked fine before and after this experiment when i used EB sticks. maybe you just have a great recipe that's more forgiving than the ones i used :)

                  1. re: soupkitten

Not sure how great it is...just pretty basic, but it works and my 4 year old picky son eats them! I guess it is pretty forgiving, though. Sometimes finely chop up apples and mix them in too. And I guess maybe it doesn't hurt that I throw a handful of chocolate chips in and call them "chocolate chip muffins".

          2. I like Brummel and Brown and use it for grilled sandwiches as well as my daily toasted english muffin. Keeps me honest during the week.

Of course butter is my favorite and I use it for cooking.

Good point Dee S. I only use real butter for cooking also. Would never think of using a spread for cooking.

I love Brummel & Brown! You're right, though. Nothing takes the place of real butter.

Another vote for Brummel & Brown.

                2. I served Earth Balance at a luncheon recently, and all my butter-loving (but health-conscious) friends were asking me where they could find it. One said it tasted like butter, which surprised me, but I think she just wanted to say it was good. I do use butter for cooking, and especially for baking. Haven't tried the EB sticks, and probably won't. Btw, I once confused EB with another spread, Smart Balance. That was the worst butter-substitute spread I ever tasted, with a really unpleasant texture.

LOL I like Smart Balance a lot, but I will try Earth Balance.

                    1. re: Mona Williams

I did a little sleuthing at the market yesterday. I never noticed Earth Balance before -- there's only one product whereas Smart Balance has 6 or 8.

Anyway, they are made by the same company, the ingredients are similar, but Earth Balance costs about a buck more per tub. Smart Balance is often on special too. Still, I can afford the extra buck if the product is really good.

                      1. re: Bob W

My family makes fun of me for using Earth Balance to dip pretzels into. If my sister chimes in on this thread, she'll get right into it. Nikki?

When I saw this thread, I immediately thought 'Earth Balance with pretzels'.

                          Side note, it's gross.

                    2. Earth Balance if I must...
