Use for leftover Jamaican cornmeal porridge?
I made Jamaican cornmeal porridge with medium grind cornmeal, honey, cinnamon, nutmeg, vanilla coconut milk & regular milk this weekend. I have a lot left over. It's a bit too wet/runny and sweetened/cinnamoned to slice and fry in the fashion of recipes I've been finding online. I was wondering if there were any ideas for how to use it. Maybe a way to combine with flour/egg or banana and baking soda/powder to incorporate it into a muffin or bread recipe? Or a way to combine with chopped nuts and a bit of flour for a sweet croquette? I'd welcome ideas! Thanks!
