Had phenomenal amaebi this weekend. The spot prawns were wonderfully plump, and briny. Due to their ample size, the deep-fried heads were the largest I've encountered so far. So, how much of the head do you eat?
All of it.
All of it, and depending on the sushi bar, extra heads left over from the squeamish who don't want to see them.
Who *doesn't* eat all of it??
I love fried shrimp heads - but have found a bit of a bitter spot towards the eyes - I usually stop before I get to the eyes... maybe I should try again - I'd hate to miss any yumminess.
A little bitterness can be desireable.
I can eat shrimp heads until my head explodes.
I eat the whole head, but I like to nibble down the delicate fried feelers first before chomping down on the head itself.
