CHOW Recipe Challenge: Your Best Muffin Recipe!

Join in on the next Chow Recipe Challenge: your best muffin recipe. Whether healthy, fruit-filled, streusel-topped, or closer to a cupcake without frosting, just make it delicious. You have from Monday, April 18, until Monday, May 16, at 11:59 a.m. EST to submit your recipe and win a great prize package from CHOW and King Arthur Flour!

        ooh, i like that idea :) methinks this is going to be a very slow contest anyway, seeing as they planned it smack in the middle of Passover, thereby excluding anyone who observes the holiday...

          ORIGINAL muffin recipes are challenging anyway. Personally, I'd get away from the fine print of original recipes and go with a best use of theme....but that's just me :)

            This has turned into a perfect storm of legal confusion and holiday goofs. The upshot: you will be able to submit recipes until May 16! I've edited the original post to reflect the new dates. So if you're not feeling muffin-friendly this week, perhaps you will the week after, or even the week after that?

            We are indeed sorry about the Passover oversight. This solidifies my status as a bad Jew and tunnel-visioned lover of muffins. Our legal team says that we can't extend the challenge once it's already started. So creative, unleavened muffin recipes will be heartily accepted and if we don't get enough submissions we'll do the contest over.

                              Agree! Many of these recipes look like cupcakes to me.

                                  shaebones, how so; none of the muffin recipes submitted are covered in frosting, icing or share a common visual to a cupcake. Are you referring to the ingredients list contained in the recipes?

                                    Just reread the directions and yes you are right, cupcakes w/o frosting allowed. I guess I was thinking of the banana - chocolate pb muffin seeming more like a cupcake than a muffin. We don't stand a chance against that one. :)

                                  Stuck inside due to a severe weather alert and tornado warning, I decided to create a nutritious and healthy muffin recipe using fresh corn for an original recipe for this contest. Unfortunately my original idea for cornbread muffins with fresh raspberries was cut short when I couldn’t find any cornmeal in the kitchen. Armed with gluten-free flour, raspberries and fresh sweet corn, I opted instead for what you see here: Raspberry Corn Muffins, vegan and gluten-free! Light, moist and not too sweet, they are full of fresh corn and berries—quite delicious.

                                  INGREDIENTS
                                  1 cup almond or soy milk
                                  1/2 cup applesauce
                                  1-1/2 teaspoons vanilla extract
                                  2 tablespoons flax meal mixed with 6 tablespoons water
                                  2 cups gluten-free all purpose flour
                                  1/2 cup raw cane sugar or agave
                                  2-1/2 teaspoons baking powder
                                  1/2 teaspoon sea salt
                                  1-1/2 cups fresh super sweet corn (about 2 ears
                                  )1 cup fresh or frozen raspberries
                                  INSTRUCTIONS
                                  Preheat oven to 350F.
                                  Mix milk, applesauce, vanilla and flax mixture together in a large bowl.
                                  Sift flour, sugar, baking powder and salt together; add to wet just until combined.
                                  Fold in fresh corn kernels and raspberries, divide amongst greased muffin pan.

                                            It's such a shame that Mrs. Smith disappeared before finishing the challenge and declaring the ultimate winner, but you were clearly the ultimate frontrunner, even if she declared them to be muffins masquerading as cupcakes.                                                 Looks like the super simple muffins are the winners here. The recipes chosen are way too simple for me. I like my muffins interesting with toppings and out of the ordinary flavor.

                                                          The most votes in the CHOW Recipe Challenge for best muffin recipe went to loghia and her delicious Meyer Lemon/Blueberry Muffins.
