Sorry, a stupid question... Are there truffle dishes on restaurant menus off the truffle season in Alba? Made of preserved truffle I mean (since the white truffle season is in November). I googled some restaurant menues but didn't find any. Have reservations at Locanda del Pilone, Piazza Duomo and La Libreria.

I was in the area for a week in April and did not see any on the menus of the restaurants i visited, including La Libera in Alba.

I doubt you will find any truffle dishes out of season in Alba or elsewhere in the Langhe region. You may find a few that use truffle-flavored oil in some of their dishes.

Not a stupid question at all, and a simple answer is yes BUT not white truffles. Here in the Piedmont central "zone" (Asti, Alba, Alessandra areas) we find truffles all year long, black, red, summer and winter ones depending on the season. However white truffles are only found in autumn when the mists come in and the temperature and humidity conditions are right, November is actually the best time, and after they come out of the ground they start to deteriorate rapidly, good for a week or two if properly stored.

Out of white season any good restaurant in the zone will offer black truffles on their menus depending on availability. Stay away from truffle oil, its a synthetic spin-off from the perfume industry!

Thank you for your answers. Any truffle will do, it doesn't have to be the white one. I'm going to Alba to attend the Vinum Alba (wine) festival and truffles just came into my mind.

I suggest you try some of our local cheeses that have truffles in them. Beppino Occelli is one of the best cheese (and butter) makers in the Langhe and he makes several artisanal cheeses with real truffles in them. Occelli's Tuma del Trifulau and Crutin are two of my favorites. Remember, locals don't eat truffles out of season for a reason. Try the cheese instead.

As I said, I saw no truffles of any color on menus in Spring and I ate in a number of what I would consider "good" restaurants in both the area around Alba and in Turin. Lots of asparagus, though!

Yup Erica you are right, black truffles come a little later in early summer. You can get winter truffles in spring if you know where to look, but they are not so good and restaurants wait for the black and whites.
