Hi all --

I'm doing the charcutepalooza challenge and we're moving on to sausage-making so I need me some fatback.

Anyone have any good sources for fatback in downtown Toronto? Is it something that I need to special order from a butcher ahead of time or is it usually in stock?

      I get berkshire fat back from The Healthy Butcher for peanuts. I don't know if you need to call ahead, so you might want to just in case.

        No specfics for DT but find a shop that cuts from hanging pork and you'll strike gold. Off hand, I'd try Chinese meat shops or possibly Grace Meat on College.

          Yeah I like Grace Meat as well. Good prices and they can get pretty much any cut you ask for if you give them a bit of notice.
