help with pita sandwich fillings

hi hounds,

i need some help.

i've been making pita sandwiches for lunch and am running out of ideas for fillings. here's my list of go-to sandwich fillings:

- roast turkey/roast beef (from the organic butcher)
- cheese
- smear of boursin/tzatziki
- english cucumbers
- baby spinach
- sliced olives
- sliced red peppers

i'm not a huge bread fan (i know, i know) so i'd like some ideas for fillings that will work with whole wheat pitas...the thin kind. i like to make sandwiches the night before so i'm also looking for ideas that will keep overnight.

    My "secret" sandwich/wrap/pocket ingredient: daikon sprouts.
    You could make mini salmon or tuna "burgers," or some grilled shrimp, pork or chicken and make a pseudo bahn mi by adding pickled carrot and daikon (but that might not keep so well overnight).

      Haven't had pitas in a while. We used to top ours with alfalfa sprouts and sunflower seeds.

        i love the idea of seeds ... for some crunch and possibly salt!

          Possibilities are endless!
          - Tuna salad, salmon salad, chicken salad, egg salad
          - Roasted veggies (peppers, onions, eggplant, squash, tomatoes)
          - Cream cheese instead of mayo/sliced cheese
          - Hummus with roasted red peppers
          - Baba ghanoush (eggplant spread)
          - marinated, grilled, and sliced chicken breast with feta cheese, cucumbers, tomatoes and kalamata olives
          - add bacon to almost anything

              i agree...endless

              anything u could do as a sandwich or even not a sandwich could go into a pita...

              my sister would just put muenster in one and nuke it for a few seconds...

              there even a chain called pita pit...
              i would check their menu and see if theres any u like....

              Falafel's great, awa ground lamb meatballs with a side of tzatziki packed separately. you can also do a taco-style filling: refried beans, rice and shredded cheese packed into the pita with a side container of shredded lettuce and tomato and maybe a salsa packet.
