Can I treat bible tripe the same way as honeycomb tripe?
I bought what I thought were three pockets of honeycomb tripe and when I got home realised I had bible tripe. I was looking forward to the texture of honeycomb tripe but oh well...
So can I still cook it the same way?
Was going to do two batches.
1. Slow braise with oxtails in Chinese flavours; soy, star anise, ginger, cinnamon. Rice. Choy. Mmmm.
2. Tomatoes, lots of onions and garlic, carrots, celery, white wine etc. Lots of parmesan and a big spoon.
(It's getting cold here in Sydney. Brrr.)
