Luau Kid's Desserts

I've been asked to create some kid friendly desserts for my newphew's first birthday this weekend. The party is a luau-theme. I'm low on ideas. Any ideas for tropical and yummy cupcakes, cookies, bars, etc.? Thanks in advance!

    I would make Haupia which is sort of like a coconut pudding/gelatine dessert. Similar to almond tofu/float in Chinese restaurants.

    You can also go the dim sum route and make Mango pudding... which again is similar to haupia which is similar to almond float.

      What about simple white cake with mutant coconut frosting? When I was a kid, the jelly-like consistency of mutant coconut was a thrill and the coconut flavor obviously weaves nicely into your tropical theme.
