Smoked Salmon

I love smoked salmon. It then occurred to me how much better it must be when smoked in-house. So who in town has the best in-house smoked salmon?

  1. the whole foods mothership over on lamar and 6th has a great selection of smoked fish, including but not limited to salmon.
    the "salmon candy" is delicious, but i tend to get the smoked stuff instead.

      The salmon candy there is smoked.

      I've been smoking steelhead at my house. It's $7/lb when you do it at home, plus about $.50 in fuel (in the form of lump charcoal). Just brine it in salt and sugar overnight, pepper and any other spices the next morning and let air dry until tacky. Then onto the smoker for 2 hours over a very small fire with pecan, apple, or alder. Pretty simple stuff. The only tricky part is keeping the fire low.

        oh i know, i just meant compared to regular smoked stuff.
        the salmon candy is am acquired taste for some.
        (or any of the other fish candy, i think i saw steelhead trout once but i could be crazy).

        i should really try more there.
        wonder if they have a smoked sable, or any of the other appetizing type smoked and pickled items i am accustomed to from my northeast upbringing.

          The last time I went they had smoked whitefish... whip up some whitefish salad! Doesn't get much more northeast than that :)

    2. While it's not smoked Salmon, El Arbol has a smoked whitefish salad that's amazing. I had it again last night. THe whitefish is smoke din house served with a heavy hand over fresh greens with fried capers, a citrus vinegrette and sliced almonds. Truly a great salad. I think it was $12ish!

        i like pretty much any kind of smoked fish.

        1. Bartlett's house smoked salmon is delicious! It comes with toast points, capers, onions and some sort of spread. Sooo good all together. They also recently added a smoked salmon rillette to their After 5 menu. If you like smoked salmon both of those will make you really happy!
