Best within 60 miles of Four Corners? And for a Vegetarian too! Will drive for food

My wife and I will be travelling in this area and would appreciate a few recommendations within approximately 60 miles of the Four Corners. Restaurants do not have to be vegetarian only, but must be vegetarian friendly. Genuine regional cuisines would be best. Any recommendations would be greatly appreciated. Thank you.

I've had a couple of really good experiences at Nero's in Cortez. And a little farther from that in Durango, there's Serious Texas BBQ and Steamworks brewpub.
