Signature desserts at high end/michelin star restaurants?
What are some signature desserts at fine dining places (like the egg at le bernardin)? Also, how can I get recipes for these fancy desserts?

Coffee and Donuts at the French Laundry. Some of them are in their eponymous cookbooks, or you could try emailing the chef/pastry chef, they may or may not be receptive.

Tomato at L'Arpege, in his cookbook, but it is the tomato that is important, not the recipe.
