Slow cooked squid ideas please?

I want a slowly braised or stewed squid dish.
Sonmething that I could add other fishes to toward the end would be good, as well.
Any ethnic derivation would be welcome.

  1. At one restaurant I worked we did this slow cooked squid, cassoulet style, and I was amazed at how tender the squid came out. We used a dutch oven to cook the beans and the squid, but any crock-pot or slow cooker should work.

    Cook white beans until they start to soften, but are still a just a little firm. If you use canned beans, skip this step. Add them to a pot with lots of diced tomatoes, some onions, garlic and fresh herbs. Bake at 350F for about 30-45minutes. Check the squid every so often to see how tender it is.

    You can add anything you want to this. Fennel comes to mind. If you add fish, cube it and then add it about 8 minutes before the pot comes out of the oven. Salmon or halibut would be great in a cassoulet but really any fish will work. Of course it wouldn't hurt to add some pork in there too, like some sausage or bacon.

    Serve the cassoulet in bowls garnished with bread crumbs.
