Asian market?
I'm looking to buy Asian staples, like fish sauce, rice paper, rice noodles, shao xing wine, etc. Is there an Asian market in NO?

As others have said Hong Kong market. Not just asian but all ethnic food items.
You ask is the fish fresh......it's swimming in tanks, honey. If you go, I'd suggest allowing an whole extra hour to have dumplings or bubble teas at the restaurants adjacent to the market.
Hong Kong also has a varied selection of housewares, from tortilla press to steampots,
and the de rigeur selection of Asian gift items. It gets really crowded on the weekend. I have been there when a whole soccer team came in on their way home to shop. Staff is very helpful when it isn't crowded.

There are several Asian markets and a Korean specific market in Metairie, but the best is (as JazzyB notes) Hong Kong which is really a supermarket with a lot of fresh produce and fish. It trends more SE Asia but has wide selections
