My fav near St Michel in the warren of stalls towards Notre Dame. You do not even have to order the falafel, you can just get the salad bar. Have had Maoz on three continents, and only this one has the great veggies and sauces. In the others all about falafel, here all about the veggies.

I have to smile wondering how many people reading the France forum of Chowhound on 4/4/11 have had the pita falafel, loaded with veggies, at the Damascus Gate in Jerusalem. Probably more than one might guess.
