3 nights in Paris. 30 to 100 Euro/persons for dinner. Anything that will blow me away?

If you had any suggestions, it would be great. I'm finding the Paris board to be quite overwhelming and don't know where to start.
My wife and I love our food. Due to allergies, though, I cannot eat fish/seafood (but she can).
We're considering chez l'Ami Jean for one of our meals (either lunch or dinner) since we fell in love with it a year ago.
We don't need pretense: we just want yummy French food. We'll be there in June.

I'm not the best source for dinners, but my response will shoot your post back to the top and others will notice.
I like Hidden Kitchen,however, reservations are tough to get. Their website shows that they have openings in mid June. go to http://www.hkmenus.com/index(old).html Tell them about the allergies and they'll work around them or advise you to skip something. Too bad as they serve the only mackeral I could ever enjoy so far in my life.
I also like au Dernier Metro because it is loud and fun and the food is very good and inexpensive.

And, chez l'Ami Jean has always been good to me (lunch) but you might wish to do a search to pick up the positive and negative buzz of recent posts.
You might also look into le Comptoir...again, I've only done lunch there....it's tight, no reservations, just gt there by 11:30 AM.
