Little Pepper vs Sripraphai businesses model

I have been going to both these places for a long time; I have never had anything but stellar food at Little Pepper. That is not the case with Sripraphai. As I have written many times I feel Sri has become so inconsistent and at times bad that I don't bother going anymore.

I am not alone in that view, although there are people whose judgement I do respect who vehemently disagree.

They are nice examples of very different businesses: Sri expanded not only the number of seats, but also added a branch. Little Pepper has upgraded, but has only marginally increased the number of seats and so far is only running one branch.

I have never been in Little Pepper and not seen the owner there, actively managing the floor and the food. I used to see Sri's owner playing the same role, but in last few years only now and then.

I just don't think a restaurant can maintain quality without that active role. If Little Pepper ever reopens the Flushing location it will be a good test. I would bet the quality and consistency would fall.

Sri's model is probably much more profitable, but if quality of food is the goal, Little Pepper's is much more successful.

So here is to Ms. Wu! Great owner and great model.
