Cooking Top Round roast

My experiences with large roasts pretty much involve pot roast or other braises. But I'm looking to have more of a roast beef, and I saw top round on sale so I bought one. I want to make sure I get the best out of it - how do you cook a top round roast?

  1. Salt generously, wrap in plastic and let sit in fridge for at least a few hours, up to 24. Sear in a hot pan, then roast at 225 for as much time as it takes to get to about 130 degrees. Let rest for 20 minutes, tented with foil
