First Meal for My New Le Creuset Dutch Oven

I just got a 7 1/4 Quart LC dutch oven. J&R had a great deal on the kiwi color for $167, and now I am planning my first meal for it.

Any suggestions? I have a couple pheasant I was thinking about roasting or doing that America's Test Kitchen adaptation of Thomas Keller's roast beef.

Anybody have any fabulous recipes to suggest.

    Braised short ribs, oxtail, or anything. I love braises with dutch ovens...

      I would probably make 4 pounds of ground meat's worth of Bolognese (turkey, beef, pork).

      Or a stracotto (Italian pot roast). Giuliano Bugialli has a great recipe: http://www.bugialli.com/page9.htm

        That book looks interesting. I can't find the recipe you reference without the book, but I did find this basic one on the NTTimes.

        Thanks for the recs. I wanted to do short ribs, but my CSA shorted me the last time out. I guess I will have to redouble my efforts to find some good meat.
